Tofu scramble is a must for any vegan’s recipe arsenal. A cruelty-free replacement for scrambled eggs, enjoy it as part of your cooked breakfast. I like to have it in a toasted English muffin sandwich as well, with some vegan cheese or avocado.
Tofu is fermented soybean. High in protein and low in calories. I’ve been making tofu scramble pretty much as soon as I became vegan. It’s so easy to make and really tasty. The spices are just a guide as well. I tend to throw in the spices without measuring and it always comes out delicious.
If you get soft tofu, you will need to squeeze some of the liquid out before cooking. I have spent years just squeezing it out with my hands over the sink but recently I have bought a tofu press and have been using that. The only thing with the tofu press is you just need to remember to use it in advance! I tend to use the tofu press more when I will be cubing tofu for stir-fries and the like.

Easy and delicious. Tofu scramble is a great replacement for scrambled egg.
- 400 g silken tofu
- 1 Tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp turmeric
- 2 Tbsp nutritional yeast
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 Tbsp almond milk
Start heating olive oil in a pan.
Crumble pressed tofu into pan and stir fry for a minute.
Add seasonings and stir fry for a few minutes.
Lastly, add milk and fry for an extra minute.
