When I first started making this simple homemade vegan stock, I couldn’t believe it has taken me so long to do. It is so freaking easy! Not only that but it is way more flavourful than the shop bought stuff, it doesn’t have all the nasty preservatives or high levels of salt. Win win win.
So, all you need to do is start collecting your veg scraps. Anything goes. Onion tops, garlic skins, anything. Collect them in a medium size freezer bag, keep it in your freezer and just keep adding to it as you have more. Once the bag is full, empty it into a large pot. Add two litres of boiling water, make sure the veg is covered, and then boil for an hour.
When an hour is up, strain the liquid from the veg, and voila! You have approximately two litres of healthy, simple homemade vegan stock!
It’ll keep in the fridge for a couple of days but you can freeze it in ice cube trays and, once frozen, pop out into a freezer bag and keep in the freezer for as and when you need some vegetable stock.

Easy and healthy vegetable stock.
- 1 medium freezer bag vegetable scraps
- 2 ltr water
Boil the vegetable scraps in the water for an hour.
