I make my black bean brownies all the time, fancied a bit of a change, and had this genius idea: swap the black beans for chickpeas (and a few other alterations obviously) and make some gluten free vegan peanut butter blondies! I am so grateful for this idea and I’m sure that you will be too. These blondies are so delicious, especially still warm from the oven with some vegan icecream. Mmm I am practically drooling just reminiscing about this. With added chocolate chunks these are almost like a cross between a chocolate chip cookie and a brownie. The best part? They are free of gluten, refined sugar, and oil! No need to feel guilty when eating these babies. I even had one for breakfast the day after making them.
These gluten free vegan blondies are full of nutritious ingredients.
Chickpeas are high in protein, iron, fiber, magnesium, calcium, and vitamin B6. Oats are high in fiber, protein, magnesium, and iron. Peanuts are also high in fiber, protein, magnesium, and iron. In fact each of these squares has 9g of protein!

Thick, fudgey, and delicious. Not only are these gluten free and vegan but they are free of oil and refined sugar as well!
- 1 can chickpeas, drained and rinsed
- 6 Tbsp aquafaba
- 160 g (1 3/4 cup) oat flour
- 125 g (1/2 cup) peanut butter
- 120 mL (1/2 cup) liquid sweetener
- 2 tsp vanilla
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp salt
Preheat oven to 170C/325F/Gas 3.
Add all ingredient to a food processor and blend until smooth.
Pour into a lined 9x9 baking pan and bake for 25 minutes.
- Optional - add chocolate chunks or raisins.
- Oat flour is just oats blended into a fine powder.
- For liquid sweetener, I use half agave and half maple syrup.
