These easy vegan peanut butter cookies are so quick to throw together. I have made them a countless number of times over the holidays!
Just 7 ingredients, combine the wet into the dry, roll into balls, and 8 minutes later you have some gorgeous, soft, comforting, easy vegan peanut butter cookies. Throw in some white or dark chocolate chunks (or both!) for extra perfection!

A favourite cookie in our household; just a few ingredients and easy to throw together. Perfect for when you need a quick sweet fix.
- 170 g caster sugar
- 250 g peanut butter
- 1 tsp vanilla
- 1/2 cup plant milk
- 155 g self-raising flour
- 1 tsp bicarbonate of soda
- 1/2 tsp salt
- 100 g chocolate chunks
Preheat oven to 170C/340F. Line baking tray with parchment paper.
Cream together the wet ingredients.
Mix the dry ingredients.
Combine the wet ingredients into the dry and stir until fully mixed.
Stir in your chocolate chunks if using.
Roll into Tbsp sized balls and place on baking tray. Crisscross with a fork to help give them shape.
Bake for 8 to 10 minutes, until edges just start browning.
