This is my recipe for easy vegan parmesan cheese. It only requires four ingredients and it is ready to eat in less than five minutes.
Use this in all the same ways you’d normally use parmesan cheese. I use it on pastas, pizzas, salads, popcorn, and even in sandwiches!
Many people don’t know this but normal parmesan cheese isn’t even vegetarian friendly. The recipe traditionally calls for rennet which taken from the stomach of a calf. Yeah, not for me, thanks.
This recipe calls for only cashews, nutritional yeast, garlic powder, and salt. Simple, wholesome ingredients.
Cashews are high in magnesium, iron and potassium. Nutritional yeast is low in calories and fat, gluten free, and high in B vitamins. I love nutritional yeast, and it is what gives this parmesan the cheesy flavour. Nutritional yeast, affectionately called ‘nooch’, is a must have for any vegan’s food cupboard. I always make sure we have some in the cupboard. I can never find it in the shops but it is easily ordered here from Amazon.

- 125 g (1 cup) cashews
- 20 g (1/3 cup) nutritional yeast
- 1 tsp garlic powder
- 1 tsp salt
Add all ingredients to a blender/food processor and blend until a fine meal is achieved.
