Vegan mayo is so easy to make. I can’t believe I spent so long buying it. I will definitely be making my own mayo from now on! Not only is it easy to make but there’s none of the preservatives that you find in the shop bought stuff which I’m always trying to have less of in my diet.
This recipe just calls for five ingredients, straight into a jug, and blend. It is ready in less than five minutes. You can tweak the recipe to your taste by adding more or less salt, or by swapping the dijon mustard for cyder vinegar and maple syrup.
If the end result is to watery add more oil but if it is too thick add more plant milk. However the proportion that I posted in the recipe below worked perfectly for me.
Also, one final tip, make sure you use a light tasting oil. I used a light vegetable oil in mine. Something light olive oil has a strong flavour which would overpower the mayo.
