This recipe arose from a desire to make some plain HobNob biscuits a little more exciting. Hubby suggested some chocolate icing but every time I make standard icing I am a little bit appalled by how much refined sugar and margarine goes into it. We are trying to cut down our refined sugar intake and I am enjoying making recipes that are more nutritious.
The icing tasted amazing, had a lovely, creamy consistency, and I’m sure if you used this in place of normal icing on a cake nobody would even realise the difference. This is easy and quick to make and a much more nutritious alternative to standard icing.
Vegan, Gluten Free, and Refined Sugar Free
A healthier alternative to standard icing. Use to ice cakes, to make plain biscuits a little more exciting, dip fresh fruit in it, or just eat it plain!
- 2 ripe avocados
- 50 g cacao powder
- 80 mL maple syrup
- 1 tbsp coconut oil, melted
- 1/2 tsp vanilla
- 1/8 tsp pink Himalayan salt
Throw everything into a blender or food processor and blend until fully combined.
Transfer into a container and pop into the refrigerator to chill until ready to use (or eat!)
- Use cocoa powder if you don't have cacao powder.
- Can swap the maple syrup for a different liquid sweetener such as date syrup or agave.
