Creamy Vegan Sweet Potato Pasta

Ingredients

  • 400 g sweet potatoes
  • 300 g spaghetti
  • 360 mL (1 1/2 cup) plant milk
  • 3 cloves garlic
  • 23 g (1/2 cup) nutritional yeast
  • 1 Tbsp extra virgin olive oil
  • 1/2 Tbsp lemon juice
  • 1 tsp English mustard
  • 1 tsp salt

Instructions

  1. Boil peeled and cubed sweet potato until soft.

  2. Cook pasta according to packet instructions.

  3. Drain sweet potato and blend in a blender along with the rest of the ingredients.

  4. Mix into your cooked spaghetti.
