Mmm, mac and cheese. Another old favourite from childhood, however, we used to eat the stuff that came in a box and I’m not sure I can even call that food now! This recipe is the total opposite in many respects. It is nutritious, dairy free, gluten free, and most importantly cruelty free but it still manages to retain it’s creamy deliciousness!
I have written about turmeric before (Golden Mylk [Turmeric Milk]) and it’s strong health benefits. Turmeric is a powerful anti-inflammatory and anti-cancer addition to your diet. You should try to get a little turmeric in everyday and this recipe is another great way to do that! It is what helps give this mac and cheese it’s beautiful colour as well.
If you are feeling fancy add a bit of fresh parsley on top of your mac and cheese. I sometimes like to sprinkle some smoked paprika on as well.
MAKE IT YOUR OWN
We generally like to eat mac and cheese with some greens, like steamed broccoli or salad. If I’m feeling like eating something a little naughtier I will cut up some vegan hot dogs and stir them in as well. This mac and cheese also goes great with some baked beans and cornbread for a real American feel. Basically, the possibilities are as endless as your imagination and just the same as the original mac and cheese!

The classic, re-invented to be dairy free and gluten free.
- 1 potato
- 2 carrot
- 1/2 white onion
- 2 garlic cloves
- 2 tbsp extra virgin olive oil
- 5 tbsp nutritional yeast
- 1/2 tbsp balsamic vinegar
- 1/2 tbsp dijon mustard
- 2 tsp turmeric
- 1 tsp onion powder
- 1/2 tsp oregano
- salt & pepper to taste
- 400 g gluten free pasta
Begin boiling the potato, carrots, and onion.
Add the rest of the ingredients to a blender (except pasta).
Start boiling the pasta.
Once the potato, carrot, and onion have softened, about 20 minutes, drain and set aside 250 mL of the water.
Add the potato, carrot, and onion to the blender. Blend until smooth and slowly add the set aside water until desired consistency is reached.
Once pasta is cooked, drain and return to pan. Stir in the sauce.
