These vegan cheesy mashed potatoes are the perfect side to a ton of main meals. Heck, I have been known to eat a bowl of this on its own with just some gravy! Warm, comforting, easy to eat, and nutritious; what’s not to love?!
The cheesy part of these mashed potatoes come from the nutritional yeast in it. Nutritional yeast is an essential part of any vegan’s food cupboard. It is just inactive yeast flakes that have a cheese-like/nutty flavour which makes it great for creating vegan cheese sauces. Also, we use it in place of parmesan on pastas, sprinkled on avocado toast, peanut butter toast, stews, soups, or salads. My 17 month-old loves it so much he will even eat it all on its own!
Nutritional yeast is low in calories and fat, gluten free, and high in B vitamins, including B12 which makes it a great addition to your diet. We have some nutritional yeast most days.
