Potato salad is a classic. Bring it to parties, barbecues, or enjoy it as side dish. This simple vegan potato salad is easy to make, only seven ingredients go into this recipe and it’s ready in less than 30 minutes.
The only ingredient in this recipe that isn’t traditionally vegan is the mayonnaise but you can now find vegan mayonnaise in all the major supermarkets however it is so easy to make your own that I’m not sure I’ll ever buy vegan mayonnaise again! Check out my easy homemade vegan mayo recipe here.

A classic; simple, easy, vegan potato salad.
- 800 g potatoes, diced
- 3 shallots, finely chopped
- handful chives, chopped
- 5 Tbsp vegan mayo
- 1 tsp dijon mustard
- 1 tsp cyder vinegar
- 1/2 tsp salt
Boil the potatoes in salted water until just tender.
Drain the potatoes and allow to cool.
Mix the potatoes together with the rest of the ingredients.
Serve straight away or will keep in fridge for a few days.
