Pancakes! Who doesn’t love pancakes? I have fond memories from childhood of waking up most Saturdays to the wonderful smell of pancakes being cooked. Now I normally eat plain fruit for breakfast but still enjoy the occasional treat of pancakes.
Since transitioning to a vegan diet I have been experimenting with different pancake recipes but they all contained white flour, something which I have been slowly cutting out of my diet on a journey to be healthier and also I don’t like giving it to my son. That is where these pancakes come in.
They are vegan, gluten free, refined sugar free, and only contain five ingredients! Perfect for little ones, my son loved them. These pancakes are super easy to make as well, just throw everything into a blender, blend, and they’re ready to cook.
These beauties are super nutritious as well. Especially the flaxseed in them, which is an excellent source of vegan omega-3 essential fatty acids, as well as fiber, vitamin B1, and copper. I try to make sure we have some flaxseed everyday.
Remember the secret to a well cooked pancake is a hot and ready frying pan! You know it’s ready when you flick a bit of water onto the pan and it sizzles.
Easy and delicious, these pancakes are vegan and gluten free.
- 60 g oats
- 1 large ripe banana
- 1 tbs flaxseed
- 1 1/2 tsp baking powder
- 240 mL plant milk
Start heating up your frying pan.
Throw all ingredients into blender and blend until smooth.
Pour onto frying pan, a few tbs worth for each pancake.
Cook until the top begins bubbling. Check it's browned sufficiently and then flip and brown the other side.
- Pop the finished pancakes into the oven on low to keep warm until all the pancakes have been cooked.
- Top pancakes as you wish, the possibilities are endless! I had maple syrup, sliced banana, and blueberries.
