I love sweet potatoes and I love finding new ways to enjoy them. This creamy vegan sweet potato pasta is deliciously comforting and a great way to get your sweet potatoes in, which are packed full of nutrients!
I stirred in some peas and some sliced tofu dogs but I think steamed broccoli or sauteed kale would be just as yummy and add some greens.
Try topping with my easy vegan parmesan cheese.

Easy, creamy, and packed full of delicious sweet potato.
- 400 g sweet potatoes
- 300 g spaghetti
- 360 mL (1 1/2 cup) plant milk
- 3 cloves garlic
- 23 g (1/2 cup) nutritional yeast
- 1 Tbsp extra virgin olive oil
- 1/2 Tbsp lemon juice
- 1 tsp English mustard
- 1 tsp salt
Boil peeled and cubed sweet potato until soft.
Cook pasta according to packet instructions.
Drain sweet potato and blend in a blender along with the rest of the ingredients.
Mix into your cooked spaghetti.
Optional: Add extras, like peas or sliced tofu dogs.
