Today I am going to share with you my favourite nice cream combination. If you haven’t heard of nice cream, it’s really just a smoothie that is so thick you need to eat it with a spoon. Nice cream is super creamy just like ice-cream but it is made from frozen bananas and therefore it is basically a super nutritious vegan alternative to ice-cream.
I love being able to enjoy a big bowl of nice cream for lunch totally guilt-free! There are more and more vegan ice-cream alternatives available on the market now (which is totally awesome!) but they are still full of saturated fat and refined sugar and I would definitely have some guilty feelings creep in if I were to have a big bowl for lunch!
Now, I am a total chocoholic and one of the ways I get in my almost daily chocolate fix is through this nice cream and slight variations thereof. I like to use raw cacao powder which is a healthier alternative to cocoa powder. Raw cacao is made by cold-pressing unroasted cocoa beans whereas cocoa powder has been through roasting and more processing. Less processing and no roasting means that more nutritional benefits are retained.
RAW CACAO POWDER
Raw cacao has one of the highest levels of antioxidants and magnesium of any foods. Magnesium is important in maintaining normal muscle and nerve function, keeping heart rate steady, supporting a healthy immune system, and keeping bones strong. It also helps to regulate blood sugar and blood pressure levels. Antioxidants are important in fighting free radicals that accumulate in your body over time which can otherwise can lead to disease and cancer.
Bearing this in mind, I recommend using cacao powder over cocoa powder for the added health benefits. The one I use is here. Of course, cocoa powder will work just fine for the chocolate flavour if you don’t have the cacao powder!
Nice cream and smoothies are a great way to get in your daily dose of greens. I almost always throw in a few handfuls of spinach or kale. They pretty much go unnoticed taste-wise but obviously have a very high nutritional value.
NICE CREAM TIP
Also, I would like to share one trick that I have learned in the many times I have made nice cream which is that you need to take the bananas out of the freezer about 15 minutes before you blend them. This softens them just enough so that your blender can handle them.
Please do rate and comment if you try this recipe and tag any pics with #thejollyrabbit on instagram; I would love to see it. Thanks 🙂
